Ingredients:

  • Gourmet Natureta Artichoke Bottom
  • 1 carrot (diced)
  • 1/2 cup cooked peas
  • 1/2 cup cooked corn
  • 2 tablespoons olive oil
  • 1 teaspoon lemon juice
  • Salt and pepper (optional)
  • 1/2 tea glass of water (if needed)
  • Fresh dill (optional)

Instructions:

  1. Prepare the Vegetables: Dice the carrot into small cubes. Cook the peas and corn, then set them aside.

  2. Prepare the Artichokes: Carefully remove the canned artichokes from the jar and drain the excess liquid. Place the artichokes in a pot.

  3. Prepare the Garnish: In the same pot, heat the olive oil over medium heat. Add the diced carrot and sauté until the carrots soften slightly. Add the cooked peas and corn. Season with salt, pepper, and lemon juice, and stir for 2-3 minutes.

  4. Stuff the Artichokes: Carefully fill the cavities of the artichokes with the garnish mixture. You can add a little water (about half a tea glass) to help steam the artichokes and keep them moist.

  5. Cook in the Pot: Cover the pot with a lid and cook on medium heat for about 15-20 minutes. The artichokes and garnish should be tender and fully cooked.

  6. Serve: Remove the artichokes from the pot and garnish with fresh dill if desired. Serve hot.
